Apricot kernels are the inner part of the seed (stone) of the apricot fruit (Prunus Armeniaca). The kernels, which look and have a similar taste to almonds, are originally white but turn brown after being dried, These are then used to produce oil and other substances which are used for a multitude of purposes.
Apricot kernels are like most nuts and seeds, very nutritious. Among the nutrients they contain are amygdalin which is commonly known as vitamin B17. Foods other than apricot kernels containing amygdalin are apple pips, grape seeds, millet, broad beans, most berries, cassava and many other seeds, beans, pulses and grains although these are at a much lower potency.
