Apple cider vinegar has centuries of use, the first guild of vinegar makers was formed in the fourteenth century and it has been used multifariously ever since. It was drunk daily by the second U.S. President, John Adams, and became the most consumed fruit juice there by the 1920s. In recent years it has had a surge in popularity.
Apple cider vinegar is made when cider with a minimum alcohol content of 5% is left with access to air but protected from flies using gauze. This process involves the micro organisms that populate the air, known as Acetobacter, forming a gelatinous membrane known as the mother which converts the alcohol into acetic acid. The aceobacter need access to air so form the cellulose based film to float themselves, this thickens with time and provides the ACV with enzymes, proteins and bacteria not found in vinegar without the mother. Pasteurisation destroys the mother, we are very careful to only source un-pasteurised, additive free, ACV, made using organic Devon cider apples, not cooking apples. The rich flavour of the vinegar is also protected this way and the result is a dark, cloudy liquid that is vastly different from the thin, insipid, pasteurised vinegars that are commercially available.
