An essential part of apple cider vinegar is allowing the micro organisms from the air, acetobacter, to form the gelatinous membrane known as the mother to form on the liquid's surface. The mother is essential to provide the vinegar with proteins, enzymes and beneficial bacteria that would be destroyed by pasteurisation. Apple cider vinegar should always contain the mother and be sourced from cider apples not cooking apples.
